Easy, low-fat, single serving blue cheese dressing

I LOVE blue cheese dressing. If ever there was a perfect dressing, it would be blue cheese. But, if you’ve ever looked at the nutrition label, you know that blue cheese dressing is also evil. So high in fat! But low-fat blue cheese dressing is just kinda gross. I do sometimes cheat a bit – I’ll buy one jar of low-fat blue cheese and one jar of full-fat and mix the two. I figure it’s still better than full-fat, but not as icky as the low-fat. IMG_2865

Recently I found a recipe online that allows you to have the creamy blue cheese dressing without all the calories and fat. It is so easy to make, and you can make just enough for your salad and not have to worry about storing the rest!

Ingredients

  • 2 tbsp low-fat sour cream
  • 2 tbsp low-fat blue cheese crumbles
  • 1/4 tsp lemon juice
  • 1/4 tsp worcestershire sauce
  • garlic salt (to taste)
  • pepper (to taste)

Combine the sour cream and blue cheese crumbles. Add a splash of lemon juice and worcestershire sauce. Start with the measurements above, but feel free to adjust based on your tastes (I tend to add a bit more worchestershire). This actually produces a bit more dressing than absolutely necessary, so you can cut it down a bit too, based on your tastes.

Here’s how the nutritional facts stack up:

Litehouse Chunky Bleu Cheese – 2 Tbsp

Litehouse Light Bleu Cheese – 2 Tbsp

Blend of Light and Regular – 2 Tbsp

Lisa’s homemade blue cheese – 2 Tbsp

One other note – if you don’t want to mess with making it yourself, there is another fabulous blue cheese based dressing, also from Lighthouse. It’s their Blue Cheese Vinaigrette dressing – you can find it with the refrigerated dressings. I know, vinaigrette and blue cheese sounds weird. But it is so tasty! 80 calories, 7 grams fat!
